As far as animated characters... I would have to say Itchy, the dachshund from All Dogs Go To Heaven. "Short legs! Short legs! Aw, my legs are short!" *Scampering after Charlie* And someone please give that poor puppy a flea collar!
Book-wise, I would have to say the team from The Book Of Night With Moon. Rhiow, Saash, Urruah, and Arhu... all so adorable! *Snuggles teh kitties*
And I LOVE how Urruah (as an alley-tom) is so obsessed with Opera, and Rhiow and Saash (as fixed queens) are both bemused by it. And don't quite understand what he finds so fascinating by it.
... And how Rhiow keeps trying to tell her humans that she doesn't like the tuna cat food, darn it!
... And Arhu's newfound obsession with pastrami and cheese.
The book is also a tearjerker, especially when Arhu (poor little kitten) opens up and tells the older cats about his past and what humans did to him. *Snuggles him*

The majority of the characters in The Fox and the Hound, especially Big, Mama, the fox, the hound, and the fox's girlfriend are all awesome characters (I forgot the names). I also like the guinea pigs from G-Force.

Mickey Mouse in Fantasia

Hello
My favorite animal character overall would have to be Fawkes. A pheonix is just a remarkable animal, the epitome of loyalty (By the way, probably the reason why it's the perfect pet for Dumbledore). Moreover (as stated by Marauderess5), Fawkes in particular symbolizes the curious bond between LV and Harry. I hope to find out more about that in HP7!

If I remember correctly, Fawkes doesn't really appear in HP7, though maybe I'm just forgetting him?
I always thought he was a gimmick anyway...and Buckbeak was much cooler!

In all honesty my favorite childhood animal characters were as follows:
Milo and Otis (which I still make my husband watch)
and Benji
followed by the original black and white Lassie
my youngest years were lacking for cartoons.
